Alginate is a linear copolymer with homopolymeric blocks of (1-4)-linked ß-D-mannuronate (M) and its C-5 epimer α-L-guluronate (G) residues, respectively, covalently linked together in different sequences or blocks. The monomers can appear in homopolymeric blocks of consecutive G-residues (G-blocks), consecutive M-residues (M-blocks), alternating M and G-residues (MG-blocks) or randomly organized blocks. The relative amount of each block type varies both with the origin of the alginate. Alternating blocks form the most flexible chains and are more soluble at lower pH than the other blocks. G-blocks form stiff chain elements, and two G-blocks of more than 6 residues each form stable cross-linked junctions with divalent cations (e.g. Ca2+, Ba2+, Sr2+ among others) leading to a three-dimensional gel network. At low pH, protonized alginates will form acidic gels. In these gels, it is mostly the homopolymeric blocks that form the junctions, where the stability of the gel is determined by the relative content of G-blocks. Commercial alginates are extracted from seaweed. Certain bacterias, however, also produce alginates. Alginates are used in food products. Purified qualities of alginates are also available for biomedical use, and it is used extensivly as a mold-making material in dentistry, prosthetics, etc. Seaweed covered rocks in the UK Phycologists consider seaweed to refer any of a large number of marine benthic algae that are multicellular, macrothallic (large-bodied), and thus differentiated from most algae that tend towards microscopic size (Smith, 1944). ... Alginate is present in the cell walls of brown algae as the calcium, magnesium and sodium salts of alginic acid.
The rationale behind the extraction of alginate from the seaweed is to convert all the alginate salts to the sodium salt, dissolve this in water, and remove the seaweed residue by filtration.
Alginate molecules are long chains that contain two different acidic components, abbreviated here for simplicity to M and G. The way in which these M and G units are arranged in the chain and the overall ratio, M/G, of the two units in a chain can vary from one species of seaweed to another.

Alginates are not random copolymers but, according to the source algae, consist of blocks of similar and strictly alternating residues (that is, MMMMMM, GGGGGG and GMGMGMGM), each of which have different conformational preferences and behavior.
The primary function of the alginates are as thermally stable cold setting gelling agents in the presence of calcium ions; gelling at far lower concentrations than gelatin.
Alginate is used in a wide variety of foodstuff such as pet food chunks, onion rings, stuffed olives, low fat spreads, sauces and pie fillings.
