Covert was born in West Palm Beach, Florida. A longtime friend of Adam Sandler, he is a familiar face to Sandler fans, having appeared in twelve of Sandler's movies. He also frequently writes for Sandler's films and comedy albums. He raised his profile as Sandler's best friend and town limousine driver in The Wedding Singer (1998), before taking on smaller roles as villains or antagonists such as the lecherous nerdy journalist in Mr. Deeds (2002) and a braggart romantic rival in Anger Management (2003), a film for which he was also executive producer. He also played Sandler's gay friend in Big Daddy (1999). He even played the role of a short-term memory loss patient, 10-Second Tom in 50 First Dates (2004). He also had a large part in the movie Little Nicky as Nicky's roommate, a role in which Covert gained 40 pounds and shaved his hairline to reflect the character..
