In this little village the tradition wants that the original recipy of the sauce was altered outside of the place: still today citzens use to prepare the sauce,using an iron pan, just with olive oil, chopped "guanciale"(= dried pork cheek, not "pancetta"=dried bacon),white wine, tomato sauce, chilli,pepper and sheep-milk cheese.
