Aviyal (IPA: [aʋijal], Malayalam: അവിയല്‍) is a dish that has a unique place in a typical Kerala Cuisine. It is a thick mixture of a lot vegetables, curd and coconut.[Only Malabarees use curd in aviyal,it is a nasty thing to do so]. It is seasoned with coconut oil and curry leaves. It is supposed to have been invented by Bheema (one of the Pandava brothers) during his agnaathavaasa. According to the legend, Ballav (Bheem's name during this time) when he assumed his duties as the cook in the kitchen of Virata, did not know how to cook. One of the first things he did was to cut a lot different types of vegetables, boiled them together and put some grated coconut and voila... what do we have? aviyal! Common vegetables that are used to make aviyal are yam, plantain, drumsticks, carrots etc. Some people prefer to substitute curd with raw mango or tamarind pulp. This dish can be made into a gravy and eaten with rice or be made into a semi-solid side dish. The word "aviyal" is also used to denote an assortment or a mixture - this sense being derived from the way the dish is made.

Ingredients

 Elephant yam few pieces Potatoes 3 Nos Green Beans few Carrots 2 Nos Peas 1/4 cup Drumstick 1 NO Eggplant 3 Nos small Plantain Bananna 1/2 Pumpkin White & orange few pieces Curry leaves few Salt Acc to taste Fresh Curds 1/2 Cup Coconut Oil 2 tbsp rice flour 1 tsp 

For Grinding

 Fresh Coconut 1 Cup Green Chilies 3 Nos Fresh Curd instead of water 

Method

  • Cut all the Vegetables to same length & size.
  • Boil all together in a cup of water.
  • Grind Coconut & chilies .
  • Add Curd instead of water to a fine paste.
  • In a bowl mix rice flour,salt & the paste.
  • Add to Veges when the veges are cooked.
  • Sprinkle Curry leaves & Coconut oil when they done.
