The BaixMaestrat is the area of Castellón located to the north of the Valencian Community.
This privileged area at the door of the Maestrat permits the exploration of innumerable trails and routes going to different cities and villages discovering its monuments, gastronomy, and culture.
The gastronomy of the BaixMaestrat is characterized by its abundant variety and wealth, as well as for possessing its own exceptional characteristics taken from the geographic area.
La població està molt desigualment repartida i així, mentre la zona interior presenta un índex de població molt baix (Sant Mateu, Traiguera, Càlig) que representa poc més de l'1 %, la zona litoral --Alcalà de Xivert, Benicarló i Vinaròs, la capital de la comarca-- està molt més fortament poblada.
A partir d'aquest moment, es va convertir en la capital efectiva del Maestrat montesià, lloc de residència dels mestres, que se'n manaren erigir en Sant Mateu son palau (la Torre).
Unionista el 1.347-1.348, va sofrir la repressió reial després de la guerra, la qual cosa juntament amb les epidèmies de finals del segle XIV i primera meitat del XV tallaren l'expansió socio-econòmica medieval, iniciada per la importància que hi foren adquirint les relacions comercials amb la Toscana, convertit Sant Mateu en centre exportador de llana.
