Beni shōga on a gyūdon

(Japanese: 紅生姜, べにしょうが). Beni shōga is a type of tsukemono (Japanese pickle). It is made from ginger cut into thin strips, coloured red, and pickled in Umezu (梅酢), that made when Umeboshi is pickled; the red colour went out of the red perilla. It is served with very many Japanese dishes, including gyūdon, okonomiyaki, and yakisoba. In the jargon of sushi restaurants, beni shoga is called “gari.” There are a few theories as to the origin of the word “gari.” Some say that beni shoga was called gari because of its “gari-gari” (crunchy) texture.
