Encyclopedia > Chazuke

Chazuke (茶漬け) is a simple Japanese food dish, made by pouring boiling green tea or water, over rice. It usually has a topping, such as umeboshi, nori (seaweed), salted cod roe, salted salmon, or sea bream. This dish first became popular in the Heian period, when water was most commonly poured over rice, but beginning in the Edo period, tea was often used instead.

Chazuke (or ochazuke) is one of my favorite things to eat.
It's just bits of vegetable or fish, some seasoning (usually something like furekake - dried seaweed, sesame seeds, preserved fish...) on top of rice on which green tea is poured.
But I never in a million years would associate tonkatsu (deep fried pork cutlet) as a chazuke topping.
Closet Cooking: Chazuke (229 words)
Chazuke(チャズケ) is a quick simple meal that consists of rice and toppings submerged in green tea.
It is commonly eaten as a late night snack or as a quick breakfast.
I have been meaning to try chazuke for a while so I made sure that I had some leftover rice and teriyaki salmon from the night before.
