Joe Croce founded CiCi Enterprises, Inc. in 1985 in Plano, TX. His athletic talent brought him to Dallas where he played football for Southern Methodist University. He put himself through college working in pizza restaurants. After receiving his degree, Joe knew that he wanted to be in an environment with intense public contact. In March of 1985, Joe opened his first restaurant with his business partner, Mike Cole. They used the first letter of their last names to come up with the name CiCi's. The restaurant was a 1,200 square foot, strictly take-out pizza restaurant. It became an instant success.

The first restaurant was so successful that a couple of years later, they opened a second restaurant. This time, the restaurant was a to-go plus a buffet concept.
