The Elstar apple is an apple cultivar that was first developed in the Netherlands in the 1950s by crossing Golden Delicious and Ingrid Marie apples. The outside of the apple is mostly red with yellow showing. The flesh is white, and has a soft, crispy texture. It may be used for cooking. Elstar is a descendant of the well-known variety Cox's Orange Pippin, and was developed in the Netherlands in the 1950s.
Elstar is definitely a crunchy apple, but not as crisp or hard as some apples, which can be difficult to bite.
The result is Elstar, which is recognised as one of the best varieties released during the 1970's, and indeed, not many have surpassed it since.
