Louis dressing is a salad dressing based on mayonnaise, to which has been added red chili sauce, minced green onion, and minced green chilis. It is commonly used as a dressing for salads featuring seafood, such as a Crab Louis (the King of Salads) or Shrimp Louis.
The origin of the dressing is disputed. The Olympic Club in Seattle, Solari’s Restaurant and the Hotel St. Francis in San Francisco, and the Bohemian in Portland all claim to be the home of the dressing, with the invention in either the 1900s or 1910s. In all cases, the original salad was made with Dungeness crab.
Louis was heavyweight champion of the world in an era when the heavyweight champion was, in the minds of many, the greatest man in the world.
Louis won his first 27 fights, 23 by knockout, with his most impressive victories being a sixth-round TKO of Primo Carnera and a fourth-round KO of Max Baer, both former heavyweight champions.
Louis was invited to the White House, where President Franklin Roosevelt felt the champ's biceps.
