Padek, a type of fish sauce, is a key ingredient in Lao cuisine. It is a thicker version of "regular", thin fish sauce. There may be chunks of fish in it (homestyle). Long fermentation contributes to a complex flavor and aroma, which resembles some fine cheeses such as Epoisse. Unlike other asian fish sauces, padek is made exclusively from freshwater fish.
