The Pegu joins the ranks of Gotham bars — Milk and Honey and the Flatiron Lounge are noteworthy — that draw inspiration for their tools, techniques, and recipes from the eminently serious mixologists of the past, like David Embury, who published the aforementioned book, The Fine Art of Mixing Drinks, in 1948.
She hopes that the bartenders and chefs who visit the Pegu Club may discover the future of cocktails written in the books of the past — and that the few people who make good cocktails will become many.
