Succotash (from the Native AmericanNarraganset language, msikwatash) is a food dish consisting primarily of lima beans (butter beans) and corn (maize), possibly including pieces of cured meat or fish. This method of preparing vegetables became very popular during the Great Depression in the United States. It was sometimes cooked in a casserole form, often with a light pie crust on top as in a traditional pot pie. In some places in the American south any mixture of vegetables prepared with lima beans and topped with lard or butter is called succotash. Succotash is a traditional dish of many Thanksgiving celebrations in Pennsylvania and other states. In Indiana Succotash is made with green beans and corn instead of lima beans. When the Pilgrims ate succotash during the first Thanksgiving repast in 1621 (presuming they did so; we only have historical evidence of the meats eaten that day), it's unlikely to have contained lima beans.
Succotash tradition, however, gives the benefit of the doubt to lima beans.
For my heirloom succotash, I grow 'Bloody Butcher', a cultivar from before 1845 that produces beautiful deep blood-red kernels, which are also perfect for masa harina, or cornmeal.
Some of you may remember succotash as little bits of vegetables, limp lima beans, and greyish corn, all tumbling out of a can and on to your plate as a child.
Served warm, or at room temperature, these succotashes are sure to charm, whether you stick with the more traditional version, or opt for the spicy Southwest Succotash, or mix up your vegetables into your very own medley.
The first is for a more traditional succotash; the second is for a light, partially cooked succotash, perfect served at room temperature; and lastly, a piquant succotash, that really could be used as a sort of corn relish.
