Encyclopedia > Undhiyun

This is very famous Gujarati vegetable preparation ( called shaak ) made especially in Winter season due to availability of one main ingredient which is paapadi. This dish is very famous from Surat in South Gujarat. It is made from varieties of ingredients like paapadi, banana , muthia ( when not used in Undhiyun - it is good snack item ) , kand, coconut water ( which gives special flavour ), desiccated coconut, ginger & green garlic, spices etc.


Traditionally all ingradients were filled in earthen pot and that pot was kept upside down ( hence the name of the dish Undhiyun. Undhu means Upside down in Gujarati ). Then, it was buried in ground with firing given from outside to cook. But, now it is made with on a cooking stove and in a stainless steel vessel without traditional upside down method.


This is very tasty vegetable which is eaten with puri or rotli. Even, it can be eaten without this Indian breads and it's a complete meal in itself.
